Today, we're sharing one of our favorite breakfast recipes: Banana Oat Muffins. These muffins are a great way to start your child's day off right with a serving of whole grains, fruit, and a touch of sweetness. They're also a great option for on-the-go mornings or as a healthy snack to pack in your child's lunch.
Banana Oat Muffins
Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup brown sugar
- 1 egg
- 1/2 cup milk
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1 ripe banana, mashed
Instructions:
- Preheat your oven to 350°F. Grease a muffin tin or line it with muffin cups.
- In a large mixing bowl, combine the oats, flour, baking powder, baking soda, salt, and brown sugar.
- In a separate bowl, beat the egg, then add the milk, melted butter, vanilla extract, and mashed banana. Stir until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Spoon the batter into the prepared muffin cups, filling them about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool for 5 minutes before removing them from the tin.
